It's been a while!



I haven't posted in quite some time.  The update is I am in the middle of another round of p90x.  At the moment I'm in Los Angeles because of my husbands job. So for the moment, enjoying the hotel life.  We are also taking advantage of our season passes to disney.

Almond Flour Chicken Bites

I had a really bad craving for popcorn chicken from KFC.  I haven't had KFC in ages.  These chicken bites are super easy to make and baked not fried.  I cut about a pound of chicken tenders into bite size pieces.  In a bowl I whisked an egg and put it aside.  In a ziplock freezer bag I mixed about a cup of almond flour, garlic powder, onion powder, parsley, and some seasoned salt.  The spices are optional and it really can be customized to what you like.  I season by smell.  If it smells good its gonna taste good!  I dropped all the chicken into the egg and covered all the pieces.  I took out the chicken from the egg mixture and put inside of the ziplock bag and shook it up.  When all the pieces where covered in the seasoned almond flour mixture I placed the chicken in rows on cookie sheet covered in aluminum foil (to spare me the clean up).  Before placing the chicken down I srayed the cookie sheet with non stick cooking spray.  My oven was preheated to 380F.  Cook for about 10 minutes on each side.  Levi loved these chicken"nuggets" and so they would be more grown up I tossed them with a little wing sauce!!!  These would be awesome in a salad!

Ta-da Lunch!!!







This has been my go-to lunch.  Chicken cooked in a little organic olive oil, seasoned with garlic powder, onion powder, and ginger powder.  Just brown up the chicken and add cabbage and bell peppers and cook the veggies until soft.  And Blam: Lunch and maybe dinner.  If you're feeling adventurous you can add pineapple after you cook the chicken.  A tad a sriracha and it was delicious.  Now time for Insanity Plyometric Cardio Circuit.  The best part of my workout is my protein shake afterwards :P

Color Oops works!!!

Color Oops is an amazing product that helped me get the red out of my hair.  I had no idea that red was such a hard color to maintain.  I definitly found out the hard way.  Red is awesome as soon as you dye it and then it bleeds big time.  So I went from super hero red to grandma red in no time.  Anywho,  they say red is the hardest color to get out but it only took me an hour.  You put this super smelly stuff on your head and wait 20 minutes.  Then rinse for another 20 minutes but I did 35 because I am paranoid. More is better :)
So these are my results!!!

 
 
My verdict is that red is awesome but too high maintance for this gal.  Oh I must add that if you usually use 2 boxes of hair dye that you will need 2 boxes of color oops to get the job done.  Note:  I was not paid by color oops to say that they are awesome.  I am just crazy enough to pick out a color at Target using the rock, paper scissors and then ended up not liking it.  haha Happy coloring to all!

50 Shades Darker

I was not referring to the book.  My boys and I are actually 50 shades darker from our vacation.  We had lots of fun and indulged in some great food.  I promised myself that I would make time to workout on the ship but that soon went out the window when there are so many activities and the stops at the ports.  Here are a few pictures and I hope you guys enjoy :)
